If we already have a warrior name, can we adjust the second half to something else if we want to? As long as we aren't changing it again too soon?

You cannot simply change your name whenever you want, no. If you don't like the second half of your name you can request a change from your leader when they do your initial warrior ceremony. If you don't however, then that is your name.
If you really want to change your name, you can send a PM to your leader and ask for permission.

It depends on the situation, to be honest.
Some Clans are more strict than others about keeping the name you were given at your warrior ceremony. That said, you may also not have been given your desired warrior name. Obviously there are several potential reasons for this - maybe a different member already had a character by the name you wanted, or maybe the name belonged to a cat from the books. We try to avoid giving two cats the exact same name or giving them a canon name. But sometimes it's neither of those. Clan staff might also not give somebody their WWN if that person has been breaking rules, or pestering them, or if they were just in a bad mood when they were doing ceremonies. It happens.
I cannot speak for other groups but we're pretty relaxed about stuff like that in IceClan. You definitely shouldn't change your name without telling anyone, as that can be confusing, but you should message the leader/deputy of your Clan. Explain the situation politely and they may grant you a renaming ceremony or just permission to switch names! Although I won't guarantee that they'll say yes, this is the best way to approach the situation. Good luck!
